1 small pkg of fresh tarragon herb
3 Tbs. ex virgin olive oil
2 Garlic cloves
4 filets of white fish i.e. Cod, Mahi- Mahi
Salt and pepper
Method –
In a large skillet mix first three ingredients and place fish filets on top. Salt and pepper to taste. Cook on medium low until fish begins to turn white then flip. About 15 minutes on first side and only 5 minutes on flipped side.
Side dish: small salad of red pepper, spinach, avocado and a few pecans. Dressing: 1 tbs ex virgin olive and balsamic vinegar.
Steamed frozen peas and lima beans.
