Ingredients –
6-Bell peppers, green, red or yellow – slice in half
1/4 cup of quinoa
1 jar of low sodium, all natural tomato sauce and fresh basil
1/2 cup chopped sweet vidalia onion
1lbs. ground turkey breast
1/4 cup of Parmesan cheese
1 garlic clove
3 tbs. olive oil
Salt, pepper to taste
Method –
Preheat oven to 350*
Cook quinoa according to package
Pan fry turkey with 1 tbs olive oil on medium heat
Sauté garlic and onion in 1tbs olive oil about 5 minutes on medium heat.
Stir tomato sauce into pan with onions and garlic, stir in cooked turkey and quinoa.
Cook on low for 2 minutes.
Line baking dish with aluminum foil
Use 1 tbs of olive oil to coat outside of peppers, fill with meat mixture, top with parmesan cheese
and bake for 15-20 minutes.
Serve with sautéed green cabbage – chopped green cabbage sautéed
in 1 tbs olive oil, salt, pepper.
