Ingredients –

3 tbs. extra virgin olive oil
2 tbs lemon juice
Dash of dried oregano
Dash salt
Pepper
Basil
2 cups Romaine lettuce
1 large sliced tomato
3 tbs chopped red onion
1/2 cup chopped cucumber
1/2 cup chopped bell pepper
10 Catamata olives
2 ounces of feta cheese
2 small grilled chicken breasts

Method –

Dressing- 3 tbs. extra virgin olive oil, 2 tbs lemon juice, dash of dried oregano, dash salt, pepper and basil. Whisk together.

Salad- 2 cups Romaine lettuce, 1 large sliced tomato, 3 tbs chopped red onion, 1/2 cup chopped cucumber, 1/2 cup chopped bell pepper,
10 Catamata olives and 2 ounces of feta cheese.

2 small grilled chicken breasts.

Toss dressing with romaine lettuce, tomato and veggies, top with sliced grilled chicken breasts.
